As you may remember, last week I mentioned my hair would be changing colour. Et voil à! I am officially a red head. I have been having a little trouble with the Blogger photo limits so I have been using Flickr instead. I don't think it impacts my posts too drastically, but please let me know if you notice a loss of photo quality or any thing else.

Zucchini pasta with Tomato and Basil sauce.

This carb-free pasta is super easy to make, incredibly delicious, and won't leave you feeling guilty and bloated. It is a perfectly refreshing and flavoursome dish to enjoy in the summer heat. This recipe uses a veggie spiralizer which can be purchased from most kitchen and homeware stores.

I have been living off this for almost a week now and I am still not sick of it. For that reason I thought I would share this guilt-free pasta recipe with you.

Ingredients:
- 4 med-lrg zucchinis
- 8 med-lrg tomatoes (if using tinned tomatoes skip steps 1 & 2)
- 2 cloves garlic (sliced, diced, or crushed as desired)
- 1 Tsp olive oil
- Basil leaves
- Salt & pepper

Method:
Pasta
1. Using your spiralizer, turn zucchini into long spaghetti-like strands. (if you don't own a spiralizer you can use a peeler to get a similar effect.)
2. Drop zucchini noodles into a pot of boiling water, cook for one minute and drain. (I personally don't do this, I prefer my noodles raw, cool, and crunchy.)

Sauce
1. Cut a small cross in the base of each tomato, place in a heat-proof bowl and cover with boiling water. Set aside for 5 mins to lift skin.
2. Remove tomatoes from water and allow to cool. Use fingers to peel away skin and crush the tomatoes to a desired consistency.
3. Add olive oil and garlic to a warm pan and cook without browning. Add tomatoes. Bring to the boil and reduce to a simmer.
4. Tear basil leaves into the sauce, add salt & pepper to taste.
5. Serve and enjoy.

B and I took a recent trip up north. We didn't do much aside from stuffing our faces with local produce and exploring the countryside. These photographs were taken with an old disposable camera I had lying around. They really don't do the beautiful countryside justice.

I was having a little fun playing around with light and shadows in these photographs. I couldn't decide between the flower crown or the cap, so you get to see both. My hair is almost completely blonde again, but not for long! I will be changing colours in the next week, so get ready for a surprise.

For me, there has always been an allure in the simplicity of minimalism; I have never been the type to don copious amounts of accessories. Only in the last few years have I come around to the idea of accessories, so I have decided to share a couple of my favourite pieces with you. On a celebratory note, my last exam was yesterday and now I am free (in time and spirit), yay! I guess this means I have no excuse to not have interesting and regular posts.

Thursday marks the day of my last exam (until next year). I should be studying, instead I am procrastinating and looking through my photo archives. These photographs are from the beginning of the year when my hair was long. I really love that the ball gown and the lighting work together to give off a 'haunted' vibe.

These photos are still crap quality, sorry. I felt super girly in this dress, it was a bit scary at first but it was a nice change. I found this dress the other week and there was just something reminiscent about it - I can't quite put my finger on it. The best part is it was only $25!

Happy Halloween! We don't really celebrate Halloween in Australia so here is the closest thing to a costume I could gather, I call it Skeleton-Fairy. It's a bit hard to notice in the photographs, but my hair is now pastel green with lilac roots. I'm not sure if I like it.
